Apple Streusal

Delicious apple streusel made from fresh ingredients having crunchy apple chips on the mascarpone cream  layered on the phyllo chips having cream on glaze on the side is sure gourmet dessert for your guests.

Ingredients for Apple streusel:

  • 4-6 Sheets Phyllo Dough
  • 2 Tbsp. Powdered Sugar
  • 4 Tbsp. Butter
  • 2 Green Apples
  • 1 Cup Sugar
  • 1/2 Cup Crushed Pecans
  • 3 Vanilla Bean
  • 2 cinnamon sticks
  • 1 star anise
  • 1/2 Cup  Milk
  • 3 Egg Yolks
  • 1/2 Cup Cream
  • mascarpone cream

Get Ready To Work in “Real Time” to make Apple streusel:

Get out these items and utensils: wax paper, 3 baking sheets, 2 sauce pan, knife and mandolin

Get from your pantry: Powdered Sugar, Pecans, cinnamon sticks, star anise

Get from your refrigerator:  Phyllo sheets, butter, milk, egg Yolks, cream, mascarpone cream, green apples

Pre-prepare the following:

  • Pre-heated oven 200 degrees
  • Preheat the oven at 350 degrees
  • Peel and slice apple with help of mandolin and soak it is simple syrup
  • Peel the apples and make small cubes of it

Begin to cook with Chef Trevethan and Chef Pelligrini:

Bake apple chips:

  1. Place apple slices onto baking sheet and bake in pre-heated oven at 200 degrees  for 10-15 minutes or until a nice dryness is reached

Prepare Phyllo chips:

  1. Take Phyllo Dough sheets and lay flat.
  2. Brush with melted butter and sprinkle with confectioners sugar
  3. Layer Phyllo 3-4 sheets thick, continuing to brush with butter and sprinkle with Confectioner’s sugar on each new layer
  4. Slice Phyllo into 3 inch long, 1 inch thick strips and place on baking sheet
  5. Cover with wax paper and place in pre-heated oven at 350 degrees

Prepare streusels:

  1. Crush pecans in food processor, and mix with sugar and butter
  2. Slice the streusel in rectangular piece
  3. Roll the pecan mix and slice the streusel in rectangular piece
  4. the oven on the wax paper and bake it in the oven till golden brown

Poach the apples:

  1. Peel green apples and cut into ½ inch thick cubes.
  2. Poach in a simple syrup having star anise, vanilla bean, cinnamon and 1/2 cup sugar and 2 cup of water
  3. Poach them for 5-6 minutes

Prepare cream on glaze:

  1. Bring cream and milk to a boil, and add sugar
  2. In mixing bowl, add egg yolks and a slight amount of cream and mix. Re-introduce to sauce pan of cream.
  3. Remove from heat and fold eggs into mixture preventing cooking on bottom
  4. Once mixed well, place in ice bath to stop the cooking process

To serve:

  1. Place streusel rectangle on bottom of serving plate.
  2. Top with poached apples, and a light sprinkle of sugar.
  3. Add a Phyllo chip on top, and top chip with mascarpone cream
  4. Top with another phyllo chip, and another scoop of mascarpone cream
  5. Garnish with 3 apple chips in mascarpone cream, and drizzle cream on glaze on side of serving plate
