Apple Walnut Salad with Gorgonzola Cheese

Ingredients

  • Spring salad mix
  • 2 Red Delicious apples.
  • Julienne (short matchstick-sized strips).
  • Sugar
  • 2 TBS melted butter
  • Salt
  • Freshly ground pepper
  • Pomegranate juice store bought
  • 2 tsp Worchester sauce
  • 1/2C Balsamic Vinegar
  • ΒΌ C Honey
  • White wine or olive oil
  • 6 stalks celery
  • Handful of walnuts
  • Handful of carrots
  • Cherry tomatoes cut in halves
  • Handful of Gorgonzola cheese
  • Sun dried tomatoes

Instructions

  1. Put Spring Mix in large bowl.

Apples:

  1. In separate bowl add cut Red Delicious Apples.
  2. Glaze with sugar and melted butter.
  3. Sprinkle with salt and pepper.
  4. Sprinkle with Pomegranate juice.
  5. Toss.

Vinaigrette dressing:

  1. In separate bowl put equal parts Balsamic vinegar and Pomegranate juice.
  2. Add Worchester sauce.
  3. Add honey and whisk.
  4. Add small amount of white wine or olive oil.
  5. Whisk together.

To prepare Salad:

  1. Mix spring salad mix with a handful of apples, carrots and Gorgonzola cheese.
  2. Arrange on plate.
  3. Add celery.
  4. Add walnuts.
  5. Add cherry tomatoes.
  6. In the center stand upright a handful of the apples.
  7. Glaze mix with vinaigrette dressing.
  8. Sprinkle with salt and sun dried tomatoes.
