Ingredients

  • 4-5 oz Baby Spinach
  • 6 oz Mixed Greens (Arugula, Frisee, Red Leaf)
  • 3 oz Shredded Carrot
  • 3 oz Craisans or Dried Cranberries
  • 1 Medium Fiji Apple Sliced
  • 2 oz Candied Walnuts
  • 6 oz Chicken Breasts Chopped and Pre-Cooked
  • 2 oz Olive Oil
  • 2 oz Balsamic Vinegar
  • 3 oz Bleu Cheese Crumbled

Instructions

  1. Combine baby spinach, mixed greens, carrots, dried cranberries, sliced Fiji apple, candied walnuts, and chicken breasts in large mixing bowl
  2. Drizzle olive oil and balsamic vinegar over salad
  3. Add crumbled bleu cheese
  4. Toss salad, making sure all pieces are covered with olive oil and balsamic vinegar

To Serve:

  1. Place salad in serving bowl
  2. Top with shredded carrots and dried cranberries
  3. Drizzle with olive oil
  4. Serve.
