Ingredients
- 4-5 oz Baby Spinach
- 6 oz Mixed Greens (Arugula, Frisee, Red Leaf)
- 3 oz Shredded Carrot
- 3 oz Craisans or Dried Cranberries
- 1 Medium Fiji Apple Sliced
- 2 oz Candied Walnuts
- 6 oz Chicken Breasts Chopped and Pre-Cooked
- 2 oz Olive Oil
- 2 oz Balsamic Vinegar
- 3 oz Bleu Cheese Crumbled
Instructions
- Combine baby spinach, mixed greens, carrots, dried cranberries, sliced Fiji apple, candied walnuts, and chicken breasts in large mixing bowl
- Drizzle olive oil and balsamic vinegar over salad
- Add crumbled bleu cheese
- Toss salad, making sure all pieces are covered with olive oil and balsamic vinegar
To Serve:
- Place salad in serving bowl
- Top with shredded carrots and dried cranberries
- Drizzle with olive oil
- Serve.
