Butterscotch Pudding

Ingredients

  • 1 cup Butter
  • 1 cup Brown Sugar
  • 2 ½ cups Whole milk
  • 2 cups heavy cream
  • 2 Tbs. cornstarch
  • 4 egg yolks
  • for garnish:

  • ½ cup whip cream
  • 2 oz. dark chocolate
  • 2 oz. white chocolate

Instructions

  1. Create a double boiler by boiling a pot of water and placing a bowl over it. Make sure water is not touching the bottom of the bowl.
  2. Add milk to bowl and begin to heat.
  3. Melt the butter in a sauce pan.
  4. Once melted add the brown sugar and mix in. Make sure not to burn.
  5. Bring the butter and brown sugar mixture up to a boil, and continue to boil it for a few minutes while stirring.
  6. Begin to warm the heavy cream in another sauce pan.
  7. Once butter and sugar mixture is smooth add the warm heavy cream and stir it until it is well incorporated.
  8. Add the cornstarch to the milk warming in the double boiler.
  9. Then add the egg yolks and stir in. Continue to stir while the mixture begins to thicken.
  10. Once mixture is thickened slowly stir in the butter sugar mixture.
  11. Once desired thickness is achieved take off of double boiler and refrigerate until chilled and set.
  12. While pudding is cooling whip the whip cream and shave the chocolate to later garnish with.
