Caribbean Tuna

Summary: Pan Seared Tuna Fillet served with a Caribbean Style Slaw

Cooking time (duration): 15 minutes

Number of servings (yield): 2

Ingredients

  • ½ Cup Jerk Spice
  • 8 Oz. Tuna Fillet
  • 4 Oz. Won Ton Skin
  • 2 Tbsp. Sugar
  • 2 Oz. Soy Sauce
  • 2 Oz. Sesame Oil
  • 1 Oz. White Vinegar
  • 4 Oz. Pea Sprouts
  • 2 Oz. Red Peppers
  • 2 Oz. Yellow Pepper
  • 1 Cup Spinach
  • 1 Onion

Instructions

  1. Render saucepan hot with olive oil and won ton chips
  2. Fry for a few minutes and set aside
  3. Rub jerk spices over tuna
  4. After about 3 minutes of searing, remove from heat and let rest.
  5. Using napkin, place under tuna fillet and remove excess oil
  6. Slice tuna into ¼” thick pieces

Slaw:

  1. In large mixing bowl, combine sugar, soy sauce, sesame oil, and white wine vinegar
  2. Add sprouts, red and yellow peppers, spinach and onions.
  3. Drizzle with slaw vinegar and balsamic

To Serve:

  1. Add slaw to small bowl.
  2. With large rectangular serving plate, place slaw on one end of plate
  3. Arrange sliced tuna pieces from one end of plate to the other
  4. Drizzle tuna pieces with vinaigrette
