Chicken and Mushroom Goulash

Summary: Egg noodles covered in a Goulash sauce loaded with chicken and mushrooms.

Ingredients

  • 1 lb. egg noodles
  • 12 button mushrooms, cut in half
  • 1 Tbs. butter
  • 1/3 cup white wine
  • 1 white onion, large dices
  • 4 chicken breast, cut into thin strips
  • 3 Tbs. paprika
  • 2 cloves of garlic, minced
  • salt and pepper
  • 2/3 cup sour cream
  • 2 oz. Parmesan cheese, grated

Instructions

  1. Saute the mushrooms in the butter and a splash of the white wine.
  2. Add the noodles to a salted boiling pot of water and cook for 12-15 minutes.
  3. Add the onions to the mushrooms and let cook for a few minutes.
  4. Add the chicken.
  5. Sprinkle in the Paprika.
  6. Mix all together and add a little more butter if pan is too dry.
  7. Add the garlic and a few pinches of salt.
  8. Add the rest of the white wine to remove and gristle from bottom of the pan.
  9. Let cook for a few more minutes then turn heat to low and add sour cream.
  10. Add salt and pepper to taste.
  11. Pour over strained noodles and garnish with Parmesan cheese.
