Summary: Crab, Pineapple and Cream Cheese Stuffed Wontons served with a Sweet Mustard Chili Sauce

Ingredients
Wontons/Stuffing:
- 1 Cup Fresh Crab Meat
- ¾ Cup Crushed Pineapple (from can, reserve juice for sauce)
- ½ Cup Scallions (reserve some for garnish)
- 1 Tbsp. Lime Juice
- ½ Cup Cream Cheese
- Wonton Wrappers
- Water
Sweet Chili Sauce:
- 2 Tbsp. Champagne Mustard
- ¼ Cup Sweet Chili Sauce
- 2 Tbsp. Lime Juice
- 2 Tbsp. Pineapple Juice
Instructions
Wontons/Stuffing:
- In large mixing bowl, add crab meat, crushed pineapple, scallions, lime juice and cream cheese
- Mix well, squeezing through hands
- Take wonton wrappers, place Tbsp. of crab stuffing into center of wrapper, top with a second wrapper. Wet edges with water and seal
- Render hot pan with oil
- Add wontons and cook until browned.
Sweet Chili Sauce:
- In medium mixing bowl, add mustard, chili sauce, lime juice and pineapple juice
- Whisk mixture well, until a smooth consistency is reached
To Serve:
- On rectangular serving plate, add ¼ cup crushed pineapple mixed with scallions and set in center of plate
- Place wontons off each side of pineapple
- Place lime wedge on top of pineapple
- Drizzle Sweet Chili Sauce around wontons on plate
- Garnish with fresh scallions
