Ingredients
Rice Wine Vinegar Salad:
- 2/3 cup English cucumber, peeled and sliced
- 1/3 cup rice wine vinegar
- 1/4 tsp. toasted sesame seeds
- 1/2 tsp. sugar
- 1/2 tsp. seasoning salt
- 1/8 cup onions, sliced
- pepper to taste
- 1 tsp. sesame oil
- 1/4 cup cooked shrimp, diced and chilled
- 1 tbsp. basil, chopped
Sour Cream and Onion Salad:
- 1/2 cup sour cream
- 1/4 tsp. seasoning salt
- 1 tsp. fresh lemon juice
- 1/4 tsp. dill
- a pinch of pepper
- 1 cup English cucumber, peeled and sliced
- 1/2 cup onions, sliced
Salmon Pinwheel Salad:
- 1 lb. smoked nova lox salmon
- 1 cup cream cheese
- 1 tsp. garlic chives
- 1/4 English cucumber, peeled and cut into sticks
- 1 1/2 tbsp. scallions, diced
- 1/4 tsp. fresh dill
- 1 tsp. fresh lemon juice
- 1/8 tsp. seasoning salt
- a pinch of pepper
Instructions
Rice Wine Vinegar Salad:
- In a medium bowl, mix together vinegar, sesame seeds, sugar, and salt.
- Add in onion and cucumber; toss to coat vegetables with sauce.
- Add pepper, sesame oil, basil, and shrimp; mix well.
- Serve immediately.
Sour Cream and Onion Salad:
- In a medium bowl, whisk together sour cream, salt, lemon juice, dill, and pepper.
- Add cucumber and onions; toss vegetables to coat with the sour cream mixture.
- Serve immediately.
Salmon Pinwheel Salad:
- In a medium bowl, combine cream cheese and chives.
- Lay salmon out flat on a cutting board.
- Spoon cream cheese mixture down the center of the salmon in a line.
- Top cream cheese with cucumber sticks, scallions, dill, salt, pepper.
- Take one side of the salmon and pull it over the filling.
- Roll the meat into a cylinder.
- Tuck in edges and sides neatly.
- Place a piece of plastic wrap over cylinder and tuck under the sides of the cylinder.
- Use both hands to smooth the plastic over the cylinder while shaping it more firmly.
- Do not remove the plastic wrap. Using a serrated knife, cut cylinder into 1-inch rolls.
- Serve immediately.
