Fried Catfish Sandwich

Summary: Fresh fried catfish on a toasted bun

Ingredients

  • 2 pre-seasoned catfish fillets (can also use salmon or cod)
  • 2 hoagie rolls/buns
  • 2 Tbsp mayonnaise
  • 1 avocado – sliced
  • 1 medium tomato – sliced
  • ΒΌ large red onion – sliced
  • 2 tsp chopped cilantro
  • 2 lettuce leaves

Instructions

  1. Brown catfish in frying pan on both sides on high heat (no oil is needed).
  2. Once browned cover, lower heat and cook 5-10 minutes depending on thickness of fish.
  3. You can butterfly the fish to get smaller pieces that will cook faster.
  4. While the fish it cooking, spread mayo on each side of both hoagie buns.
  5. Brown the hoagies in frying pan (brown both sides).
  6. When hoagies are brown, remove from pan to plate.
  7. Add avocado, onion, tomato, cilantro, lettuce leaf fish to create sandwich.
