Fried Yucca Root

Ingredients

  • 1 Yucca root
  • 2-3 c oil (extra virgin olive oil or peanut oil)
  • ½ c sour cream
  • 1 Tbsp sarachi sauce
  • 1 Tbsp honey
  • 1 small tomato

Instructions

  1. Microwave yucca root 3-5 minutes to loosen skin, then peel skin off.
  2. Break apart yucca into 5-7 pieces (can be more with smaller pieces).
  3. Fry in oil 5-7 minutes.
  4. While yucca is frying, prepare dipping sauce.
  5. Mix sour cream, sarachi sauce and honey.
  6. When yucca is ready, remove from pan and pat off oil.
  7. Arrange on a plate with dipping sauce.
  8. Create tomato rose for garnish.
  9. Peel the skin from the tomato much as you would from an apple, creating one long strand.
  10. Roll the skin around your finger to create a “rose”.
