Summary: Fried yucca root with dipping sauce

Ingredients
- 1 Yucca root
- 2-3 c oil (extra virgin olive oil or peanut oil)
- ½ c sour cream
- 1 Tbsp sarachi sauce
- 1 Tbsp honey
- 1 small tomato
Instructions
- Microwave yucca root 3-5 minutes to loosen skin, then peel skin off.
- Break apart yucca into 5-7 pieces (can be more with smaller pieces).
- Fry in oil 5-7 minutes.
- While yucca is frying, prepare dipping sauce.
- Mix sour cream, sarachi sauce and honey.
- When yucca is ready, remove from pan and pat off oil.
- Arrange on a plate with dipping sauce.
- Create tomato rose for garnish.
- Peel the skin from the tomato much as you would from an apple, creating one long strand.
- Roll the skin around your finger to create a “rose”.
