Summary: Fried goat cheese balls served with truffle honey.

Ingredients
- 1 c goat cheese
- 1 c flour
- 3 beaten eggs
- Phyllo dough (cut into approximately 3×3 in squares)
- 1-2 c oil
- ¼ c honey
- ¼ tsp black truffle oil
- paprika
Instructions
- Put oil in saucepan over med heat.
- Take about 1 tsp goat cheese and roll into a ball (about the size of a nickel)
- Place 3-4 balls into flour and roll each in the flour
- Shred one slice of phyllo dough (by slicing in very thin strips)
- Drop each ball into egg and let sit for a couple of seconds (should be the consistency of paste when you take it out)
- Then place the 3-4 balls you just dipped in egg on the shredded dough.
- Roll around in the dough so that it sticks to each ball (the goal is to make a crust from the dough).
- Fry each ball in the pan of oil for about 15 seconds (you don’t want to melt the cheese; just cook the phyllo dough).
- Take out of oil and place each ball on a spoon.
- Mix the black truffle oil into the honey.
- Drizzle a little honey on each ball with a fork.
- Add a pinch of paprika to each ball (for color) and serve.
