Summary: Green salad with gorgonzola and berries, topped with a strawberry vinaigrette

Ingredients
Salad:
- 4 c salad greens
- 12-15 strawberry tomatoes (halved)
- ¼ of small sweet purple onion – sliced
- 4 Tbsp chopped walnuts
- 1/3 cucumber – sliced
- 1 sliced avocado – skin removed
- ½ c gorgonzola cheese
- 1 c raspberries
- 1 c blackberries
- 1 c sliced strawberries
Layer all these ingredients in a very large bowl in the order they are listed.
Strawberry Vinaigrette:
- 1 c extra virgin olive oil
- ¼ c balsamic vinegar
- 1 tsp chopped fresh garlic
- 1 Tbsp fresh basil – chiffonade (roughly cut)
- 2 Tbsp Dijon mustard
- 3 Tbsp strawberry preserves
- 2 tsp sherry
- 2 tsp fresh ground pepper
- 2 tsp kosher salt
- 2 tsp sundried tomatoes – chopped
Instructions
- Layer all ingredients for salad in a very large bowl in the order they are listed.
- Whisk all of the ingredients for the Strawberry Vinaigrette together.
- Taste and make adjustments for sweet/sour as necessary.
- Serve salad and vinaigrette separately.
