Gorgonzola and Berries Salad

Summary: Green salad with gorgonzola and berries, topped with a strawberry vinaigrette

Ingredients

Salad:

  • 4 c salad greens
  • 12-15 strawberry tomatoes (halved)
  • ¼ of small sweet purple onion – sliced
  • 4 Tbsp chopped walnuts
  • 1/3 cucumber – sliced
  • 1 sliced avocado – skin removed
  • ½ c gorgonzola cheese
  • 1 c raspberries
  • 1 c blackberries
  • 1 c sliced strawberries

Layer all these ingredients in a very large bowl in the order they are listed.

Strawberry Vinaigrette:

  • 1 c extra virgin olive oil
  • ¼ c balsamic vinegar
  • 1 tsp chopped fresh garlic
  • 1 Tbsp fresh basil – chiffonade (roughly cut)
  • 2 Tbsp Dijon mustard
  • 3 Tbsp strawberry preserves
  • 2 tsp sherry
  • 2 tsp fresh ground pepper
  • 2 tsp kosher salt
  • 2 tsp sundried tomatoes – chopped

Instructions

  1. Layer all ingredients for salad in a very large bowl in the order they are listed.

  2. Whisk all of the ingredients for the Strawberry Vinaigrette together.
  3. Taste and make adjustments for sweet/sour as necessary.
  4. Serve salad and vinaigrette separately.
