Grandma’s Baked Apples

Ingredients

  • 4 apples – Granny Smith work good, but you can use any kind
  • ½ c butter
  • ½ c brown sugar (can use sugar free and make this a sugar free recipe)
  • ¼ c chopped walnuts
  • ½ c maple syrup (can be sugar free)
  • ½ c whipping cream
  • Pom juice – or diluted pomegranate juice

Instructions

  1. Peel and core apples
  2. Melt butter (on low heat) in saucepan, which will be used to brown apples later
  3. Pour butter into medium bowl
  4. Add brown sugar to butter; then add chopped nuts; mix these together.
  5. Brown apples in pan used to melt butter on low heat; brown on both sides.
  6. When the apples are turned, spoon sauce with nuts onto the apple so it drips into the area where the core was.
  7. Move pan from stove to oven.
  8. While the apples are cooking, make the whipped cream sauce.
  9. Put ½ c maple syrup in saucepan and bring to a boil.
  10. When it boils, add whipping cream very sparingly, continuing to stir over low heat.
  11. Once this starts to boil remove from heat.
  12. Pour ¼ of sauce into the center of a small bowl or plate.
  13. When the apples are soft, remove from oven and place one on the cream mixture in each bowl/plate.
  14. Dot small amounts of pomegranate juice around the outer edges of the cream.
  15. Serve.
