King Crab with Avocado Dressing

Ingredients

  • 4lbs Alaskan king crab legs, previously cooked, meat removed from shell
  • 1 avocado, ripe, soft
  • juice from 1 lime
  • juice from 1 lemon
  • 1/4 c chopped basil
  • 1 clove garlic, chopped
  • 1 tsp honey
  • 1/2 cup hvy cream
  • 1 head of red leaf lettuce
  • 2 tbl butter
  • 1 c grape tomatoes
  • 1/4 c white wine
  • salt and pepper to taste

Instructions

  1. Mash avocado with citrus juice, basil, garlic, and honey.
  2. Add hvy cream and mix to a dressing consistency.
  3. Check seasoning for salt and pepper.
  4. Add butter and tomatoes to med skillet and saute for 1 minute.
  5. Add crab and heat through for 2 minutes more.
  6. Finish by adding the white wine and stirring to incorporate.
  7. To serve, divide lettuce between plates, top with some of the crab/tomato mixture and drizzle with dressing.
