Ingredients
- 4lbs Alaskan king crab legs, previously cooked, meat removed from shell
- 1 avocado, ripe, soft
- juice from 1 lime
- juice from 1 lemon
- 1/4 c chopped basil
- 1 clove garlic, chopped
- 1 tsp honey
- 1/2 cup hvy cream
- 1 head of red leaf lettuce
- 2 tbl butter
- 1 c grape tomatoes
- 1/4 c white wine
- salt and pepper to taste
Instructions
- Mash avocado with citrus juice, basil, garlic, and honey.
- Add hvy cream and mix to a dressing consistency.
- Check seasoning for salt and pepper.
- Add butter and tomatoes to med skillet and saute for 1 minute.
- Add crab and heat through for 2 minutes more.
- Finish by adding the white wine and stirring to incorporate.
- To serve, divide lettuce between plates, top with some of the crab/tomato mixture and drizzle with dressing.
