Ingredients

  • 1 lotus root
  • 3/4 lb ground pork
  • 2 tbl rice wine
  • 3 tbl soy sauce
  • 2 tsp sugar
  • 2 green onions, diced
  • 1 tsp freshly grated ginger
  • 1 egg
  • Flour and water to make thin batter
  • 3 tbl olive oil
  • salt and white pepper

Instructions

  1. Slice lotus root in 1/2 inch slices.
  2. Then take that slice and cut as if you were making it into two pieces, but stopping before slicing all the way through. The same way you would slice a deli roll, it creates some what of a pocket.
  3. Mix ground pork, rice wine, soy sauce, sugar, green onions, ginger and egg.
  4. Place about a tsp or more (depends on the size lotus root) into the lotus root pocket.
  5. Make a mixture of flour and water to form thin batter. 1 c flour to 1/2 c water, add more water if too thick.
  6. Coat a large skillet with olive oil.
  7. Dip lotus, pork sandwiches in batter and pan fry turning occasionally, until golden brown and the pork is cooked.
  8. This will take about 10 minutes.
  9. To serve, sprinkle with white pepper and salt.
