Ingredients
- 1 lotus root
- 3/4 lb ground pork
- 2 tbl rice wine
- 3 tbl soy sauce
- 2 tsp sugar
- 2 green onions, diced
- 1 tsp freshly grated ginger
- 1 egg
- Flour and water to make thin batter
- 3 tbl olive oil
- salt and white pepper
Instructions
- Slice lotus root in 1/2 inch slices.
- Then take that slice and cut as if you were making it into two pieces, but stopping before slicing all the way through. The same way you would slice a deli roll, it creates some what of a pocket.
- Mix ground pork, rice wine, soy sauce, sugar, green onions, ginger and egg.
- Place about a tsp or more (depends on the size lotus root) into the lotus root pocket.
- Make a mixture of flour and water to form thin batter. 1 c flour to 1/2 c water, add more water if too thick.
- Coat a large skillet with olive oil.
- Dip lotus, pork sandwiches in batter and pan fry turning occasionally, until golden brown and the pork is cooked.
- This will take about 10 minutes.
- To serve, sprinkle with white pepper and salt.
