Mini Calzones

Summary: Chicken Club style mini calzones with fresh avocado, corn and tomatoes.

Ingredients

  • 2 Chicken Breasts Grilled and cubed
  • 1 Cup Tomato stewed
  • ½ Cup Corn
  • 1 Avocado cubed
  • 1 Cup parmesan cheese
  • 1 ½ Tbsp. Mayonnaise
  • 1 Tbsp. Ketchup
  • 1 Tsp. Worschestire Sauce

Instructions

Sauce:

  1. In mixing bowl, combine mayonnaise, ketchup, parmesan cheese, and worschestire sauce.
  2. Mix well.

Calzones:

  1. Saute or grill two chicken breasts.
  2. Cut chicken breasts into cubes
  3. In mixing bowl, combine tomato, corn, avocado and chicken.
  4. Mix well
  5. Using premade dough, cut into triangle shapes
  6. Add a spoonful of chicken filling on one end of dough, and dressing on other side.
  7. Roll into a ball like shape.
  8. Then roll into another piece of dough to ensure their sealed.
  9. Place rolled calzones onto baking sheet, and brush with butter
  10. Cook at 400 degrees for 3-5 minutes, (or until golden brown).
  11. For presentation on serving plate, half a bell pepper and flower.
  12. Place into center of serving plate.
  13. Top bell pepper with calzone, and sprinkle with parmesan cheese.
  14. Add a spoon of sauce and top with corn.
  15. Serve.
