Mixed Greens with Raspberry Vinaigrette

Summary: Mixed Green Salad Served with a Raspberry Vinaigrette and Bleu Cheese

Ingredients

  • 12oz Mixed Greens
  • ½ Cup Balsamic Vinegar
  • 2 Tbsp. Raspberry Jam
  • 1 Tsp. Italian Seasoning
  • ½ Egg White
  • 1 Tbsp. Black pepper
  • ½ Tsp. Kosher Salt
  • 2 Tbsp. Pine Nuts
  • 4oz Bleu Cheese – crumbled

Instructions

  1. In food processor, combine balsamic vinegar, raspberry jam, Italian seasoning, and egg white, black pepper and salt.
  2. Mix in food processor, while adding oil

To Serve:

  1. Place salad greens in large serving bowl
  2. Spoon dressing into salad bowl, (little goes a long way), just until leaves are lightly covered
  3. Place salad in individual serving bowl
  4. Slice cherry tomatoes into thin slices, and add around salad
  5. Sprinkle with pine nuts
  6. Top with Bleu Cheese
  7. Serve.
