Oriental Pasta Salad

Ingredients

  • 1 package of Angel Hair pasta
  • 2 C. Broccoli
  • 4 Green Onions
  • 1 Large Red or Yellow Bell Pepper
  • 1 Can Shoepeg Corn, or sweet white corn
  • 1 Jar of Plum Sauce
  • 1 Can of Mandarin Oranges
  • 2 Tbsp. Sesame Oil
  • 1 Tbsp. Soy Sauce
  • Optional: Almonds

Instructions

  1. In a large pot, bring water to boil and add pasta
  2. Add broccoli to boiling water with noodles, but only leave broccoli in for 1 minute, then remove
  3. Stir pasta occasionally to prevent sticking
  4. Chop green onions
  5. Thin julienne the bell pepper
  6. Add green onion, bell pepper and corn into large mixing bowl with sesame oil
  7. Add broccoli and plum sauce, mix well.
  8. Add soy sauce, (more can be added if desired)
  9. After straining pasta and running cold water through it, drain and add to the mixing bowl.
  10. Stir well to ensure pasta is covered with sauce
  11. Spoon pasta into the center of large serving bowl, adding the vegetables over the top
  12. Garnish with mandarin orange slices and nuts
  13. Serve and enjoy.
