Summary: Delicious stir fry featuring pork, watermelon peel and Chinese yam root

Ingredients
- 1 piece Mountain Medicine (Chinese yam root), 4 in. long
- 2 lg. peeled carrots, approx. 4 in. long
- Watermelon peel, approx. 4 in. long, trimmed of green outer layer
- 1 lb. pork loin
- 4 tbsp. cooking wine
- Sugar
- Cornstarch
- Soy sauce
- 2 green onions
- Fresh ginger root
- Cooking oil
- 2 sm. red hot peppers
- Salt
Instructions
- Bring 1 qt. of water to boil in a saucepan.
- Cut pork loin into 2-inch pieces, then slice into thin strips.
- Place in a bowl and add cooking wine, 1 tbsp. cornstarch and 1 tbsp. soy sauce.
- Mix well by hand, then add to the boiling water and cook for 30 seconds.
- Drain broth through strainer and reserve, while setting meat aside.
- While heating a wok, slice 1 cup of watermelon peel and carrot, slice off two thin strips of ginger, and julienne Mountain Medicine.
- Place ginger, onions and peppers in wok, followed by watermelon peel, carrot and Mountain Medicine.
- Season with a pinch of salt and sugar, then add ½ cup of the reserved meat broth.
