Potluck Meal Using Leftovers

Summary: Using leftovers, Chef Dominic Tedesco and Lucie Ventura, author of “Touched by Diabetes,” prepare a potluck meal of chicken delight, pasta, halibut and mahi mahi with a citrus sauce, and dessert.

Ingredients

Chicken:

  • Chicken
  • Shallot, chopped
  • 1 green bell pepper
  • 1 red bell pepper
  • ¼ cup white wine
  • 1 cup chicken stock
  • Salt
  • Pepper

Seafood:

  • 1 halibut fillet
  • 1 mahi mahi fillet
  • ¼ cup tequila
  • Fresh orange, lemon, and lime juice

Pasta:

  • 2 cups pasta
  • 2 cups Marinara sauce
  • 1 tbsp Tabasco sauce
  • Parmesan cheese
  • Fresh chopped parsley

Dessert:

  • Doughnut sticks
  • 2 cups oil
  • ½ lb cooked pizza dough
  • ¼ cup brown sugar
  • 1 tbsp cinnamon
  • ½ sliced strawberries

Instructions

Chicken Directions:

  1. Render hot large skillet with oil.
  2. Sauté chopped shallots.
  3. Cut chicken on bias, ½ inch thick.
  4. Season with salt and pepper.
  5. Add chicken to pan.
  6. Chop bell peppers into ¼ inch pieces and add to pan
  7. Add white wine.
  8. Add chicken stock.
  9. Cover and let simmer.

To Serve Chicken:

  1. Place chicken on serving plate.
  2. Spoon vegetables and juice over chicken.

Seafood Directions:

  1. Render hot pan with olive oil.
  2. Place mahi mahi and halibut fillets in pan.
  3. Season with salt and pepper. Set aside.
  4. In hot pan add tequila and juice.
  5. Stir and let cook down.

To Serve Seafood:

  1. Place fish on serving plate.
  2. Top fish with citrus sauce.
  3. Garnish with fresh cilantro.

Pasta Directions:

  1. Bring water to boil and add pasta.
  2. Heat marinara sauce in sauce pan.
  3. Add Tabasco sauce.

To Serve Pasta:

  1. Place cooked pasta on serving plate.
  2. Spoon marinara over pasta.
  3. Garnish with parmesan cheese and fresh parsley.

Dessert Directions:

  1. Doughnut sticks
  2. Heat oil in medium sauce pan.
  3. Cut pizza dough into strips.
  4. Place dough in oil.
  5. Rotate until puffy and light golden brown.
  6. Mix together brown sugar and cinnamon.
  7. Remove doughnut sticks from oil and place on napkin to drain.

To Serve Dessert:

  1. Place doughnut sticks on serving plate.
  2. Shake sugar mixture over doughnut sticks.
  3. Garnish with strawberry slices.
