Sabayonne

Summary:Italian custard with Fresh Berries and Egg Based Topping is quick and easy to make desert.

Prep time and Cooking time (duration): 5 minutes

Number of servings (yield): 5

Ingredients for Sabayonne:

  • 5 Egg Yolks
  • 5 Tbsp. Sugar
  • 8 Tbsp. Vin Santo
  • ¼ cup blue berries
  • ¼ cup black berries,
  • ¼ cup raspberries
  • Orange
  • mint

Get Ready To Work in “Real Time” to Make Sabayonne

Get out these items and utensils: 1 stainless bowl

Get from pantry: Sugar, Vin Santo

Get from refrigerator: eggs, wine, orange, mint, blue berries, black berries, raspberries

Begin to cook with Chef Pellegrini:

  1. In large  bowl, add egg yolks, sugar, Vin Santo, and I table spoon Orange zest
  2. Mix well
  3. Add to heat on stove top, whisking consistently to incorporate air to the yolk.
  4. Continue to whisk over heat until thickened, remove

To Serve:

  1. In large serving bowl, add a mixture of berries (1 cup)
  2. Spoon Sabayonne over the top of fruit
  3. Place in oven on broil for a 1 minute or so, until light brown color on top
  4. Garnish with fresh sprig of mint
