Seared Tuna and Halibut with a Passion Fruit Salsa

Summary: With the help of Cheflive guest Chrissy Watson, Chef Dominic Tedesco makes a delicious seared ahi tuna topped with a passion fruit salsa and halibut cooked two different ways.

Ingredients

Salsa:

  • ½ large onion, diced
  • 2 tomatoes, diced
  • ½ cup mandarin oranges
  • 2 green onions, chopped
  • ¼ cup rice wine vinegar
  • 2 tbsp passion fruit puree
  • 1 tbsp Tabasco
  • ½ lime squeezed
  • Salt
  • Pepper

Fish/Seafood:

  • Peanut oil
  • 6 Jumbo shrimp
  • Salt
  • Pepper
  • 2 8 oz Ahi tuna fillet
  • 2 8 oz halibut fillet

Cream Sauce:

  • 1 ½ cup heavy whipping cream
  • 2 tbsp butter
  • 1 cup pecorino romano

Vegetable Sauce:

  • Minced garlic
  • Extra virgin olive oil
  • ½ cup green bell peppers
  • ½ cup roasted red peppers
  • ¼ cup tequila
  • ¼ cup mushrooms
  • ½ lime squeezed

Instructions

Passion Fruit Salsa:

  1. Dice ½ large white onion
  2. Dice 2 tomatoes
  3. Chop, thinly, two green onions
  4. In large mixing bowl, combine ingredients
  5. Add rice wine vinegar, Mandarin oranges, Passion Fruit puree, Tabasco, ½ lime squeezed and salt and pepper
  6. Mix well, set aside

Fish/Seafood:

  1. Render pan hot with peanut oil
  2. Take shrimp, and slice them down the back to butterfly
  3. Place shrimp in hot pan
  4. Cook until white and red throughout
  5. Add shrimp to bowl of Salsa, and refrigerate

Ahi Tuna:

  1. Render hot skillet with peanut oil
  2. Season tuna fillets with salt and pepper
  3. Place seasoned side down in hot skillet, season other side with salt and pepper
  4. Sear both sides on medium high heat to med/med. Rare
  5. Remove from heat and let rest

Halibut:

  1. Render skillet hot with peanut oil
  2. Season halibut with salt and pepper, placing halibut in skillet seasoned side down
  3. Season other side with salt and pepper
  4. Cook halibut on one side
  5. Remove from stove and place in over at 300 degrees for 5-10 minutes to finish cooking

Cream Sauce:

  1. Render pan hot, add heavy whipping cream
  2. Add butter
  3. Let simmer and cook down to thicken, lower heat to prevent boil over
  4. Add Pecorino Romano cheese, stir in to mix

Vegetable Sauce:

  1. Render hot pan with extra virgin olive oil
  2. Add green peppers, roasted red peppers, mushrooms and tequila
  3. Stir well, and burn off tequila
  4. Add sliced garlic cloves
  5. Add squeezed lime
  6. Season with salt and pepper

To Serve:

Ahi Tuna:

  1. Place Ahi Tuna fillets in center of large serving plate
  2. Top with passion fruit salsa
  3. Arrange shrimp around salsa
  4. Garnish with fresh chopped cilantro

Halibut with Cream Sauce:

  1. Spoon cream sauce in center of plate
  2. Place halibut fillet in center of sauce
  3. Garnish with fresh parsley
  4. Optional: Garnish with halved cherry tomatoes in cream sauce

Halibut with Vegetable Sauce:

  1. Spoon vegetable sauce into center of plate
  2. Place halibut fillet over vegetables
