Shrimp and Crab Cakes

Summary:Delicious Shrimp and crab cakes made with fresh herbs and ingredients having apple and lemon grass dressing served with asparagus and butternut squash is an excellent appetizer.

Prep time and Cooking time (duration): 20 minutes

Ingredients for Shrimp and Crab Cakes:

  • ½ lb. Jumbo Shrimp
  • ½ lb. Fresh Crab Meat
  • Fresh Rosemary
  • Fresh dill
  • Fresh thyme
  • Fresh parsley
  • 1 Butternut Squash
  • 4 Stalks of White Asparagus
  • 1 Green Apple
  • 2 Small Lemons
  • ½ Stalk lemon grass
  • Butter
  • 7 garlic cloves
  • 2 shallots
  • Salt
  • Pepper
  • frieze salad
  • extra virgin olive oil

Get Ready To Work in “Real Time” to Make Shrimp and Crab Cakes:

Get out these items and utensils: Knife for cutting, 2 non stick heavy Teflon pan, food processor, cutting board, 1 bowl

Get from pantry: Garlic, shallots, Salt, pepper extra virgin olive oil

Get from refrigerator: butter, Jumbo Shrimp, Fresh Crab Meat, Rosemary, dill, parsley, Asparagus Lemons, Apple, Butter, frieze salad

Pre-prepare the following:

  1. Start by making crab and shrimp mix.
  2. Using food processor, toss in shrimp and pulse until a paste-like consistency is achieved and shift the shrimp paste  to bowl
  3. Add crab lump meat to bowl, season with salt and pepper
  4. Add finely chopped dill, thyme, parsley and shallots, mix well and set aside
  5. Slice butternut squash into ½” thick rounds, and cut in half and slice into small square pieces
  6. Cut tops from asparagus, (set aside for garnish), and slice stems into ¼” thick rounds
Begin to cook with Chef Pellegrini:

Cook Asparagus and butternut squash:
  1. Render pan hot with olive oil and butter
  2. Add butternut squash to pan
  3. Slice shallot and add to pan
  4. Add asparagus in to the pan
  5. Sprinkle salt` and pepper and cook for 6-7 minutes or till asparagus and squash gets little tender.

Prepare crab cakes:

  1. Render pan hot with olive oil
  2. Add 4 whole cloves of garlic to olive oil
  3. Add 2 twigs of thyme into the pan
  4. Roll crab and shrimp meat between spoons to make tight, add to pan
  5. Rotate and cook on each side for 2-3 minutes till it gets golden brown on both the sides

Prepare dressing:

  1. Using whole green apple, cut into pieces and place into food processor or blender
  2. Squeeze fresh lemon juice into apples
  3. Add small amount of chopped shallot
  4. Slice ½ stalk of lemon grass and add to apples
  5. Sprinkle salt
  6. Add Olive oil and blend
  7. Once blended, place dressing in strainer and work sauce through

To Serve:

  1. On rectangular serving plate, lay out frieze salad
  2. Lay butternut squash on top of frieze
  3. Slice apple into thin rounds, and lay over butternut squash
  4. Place crab and shrimp cakes on top of apple slices
  5. Drizzle dressing over crab cakes and salad
  6. Garnish with Volcanic Red Sea Salt and a drizzle of Olive Oil
