Shrimp Chive Bamboo Woodear

Summary: Shrimp and Fresh Chives with fresh bamboo shoots topped with Woodear

Ingredients

  • 1 Cup Woodear
  • 1 lb. Shrimp
  • 2 Rounds fresh Ginger (1/4″ thick)
  • 1-1/2 Cup Fresh Chives – Chop into 3 inch pieces
  • 3 Tbsp. Cooking Oil
  • 2 Green Onions – chopped into 3 inch pieces
  • ½ Cup Bamboo Shoots – Sliced
  • 2 Tsp. Salt
  • 1 Tbsp. White Pepper
  • 2 Tsp. Sugar

Instructions

  1. Render wok hot with oil
  2. Chop chives into 3 inch long pieces
  3. Place shrimp in mixing bowl and season with: Cooking Oil, Sugar, Soy Sauce and White Pepper
  4. Add shrimp to Wok with ginger, shrimp and green onions
  5. Stir constantly, as your cooking over high heat and you don’t want to burn
  6. Once shrimp are cooked, remove from Wok and place in bowl
  7. Add more cooking oil to wok, add in chives
  8. Add in sliced bamboo, season with salt and sugar
  9. Re-introduce shrimp to work and stir well to mix
  10. Once shrimp are brought back to temperature, remove contents from wok and place on large serving plate
  11. Add woodear to work, cooking for a short amount of time. Season with salt and sugar

To Serve:

  1. Place all contents onto large serving plate
  2. Place woodear on top of shrimp and chives
  3. Serve
