Shrimp Hearts of Palm with Mushrooms

Summary: Sauteed Shrimp Served with Hearts of Palm and Mushrooms

Ingredients

  • 12oz Mushroom Caps
  • 1 lb. Shrimp
  • 1 Tbsp. Fresh Cilantro – Minced
  • 1 Tbsp. Honey
  • 1 Clove Garlic – Minced
  • 2 Hearts of Palm
  • 4oz Grape Tomatoes
  • ½ Lemon
  • ½ Avocado
  • 1 Tbsp. Extra Virgin Olive Oil

Instructions

  1. Remove stems from mushrooms, reserving caps.
  2. Quarter mushroom caps
  3. Render pan hot with olive oil, add mushrooms
  4. Season mushrooms with salt
  5. Prepare shrimp by seasoning with cilantro, honey, minced garlic
  6. Remove mushrooms from pan, set aside.
  7. Add shrimp to saucepan and saute
  8. Prepare presentation: In large bowl, add lettuce heart leaves to center of bowl.
  9. Slice hearts of palm ¼” thick, and place over lettuce.
  10. Place shrimp around bowl, with one in center.
  11. Add mushrooms around shrimp.
  12. Half grape tomatoes and place around bowl.
  13. Squeeze fresh lemon juice over shrimp and salad, drizzle olive oil over dish.
  14. Add fresh slices of avocado, and a dash of black pepper.
