Summary: Sauteed Shrimp Served with Hearts of Palm and Mushrooms

Ingredients
- 12oz Mushroom Caps
- 1 lb. Shrimp
- 1 Tbsp. Fresh Cilantro – Minced
- 1 Tbsp. Honey
- 1 Clove Garlic – Minced
- 2 Hearts of Palm
- 4oz Grape Tomatoes
- ½ Lemon
- ½ Avocado
- 1 Tbsp. Extra Virgin Olive Oil
Instructions
- Remove stems from mushrooms, reserving caps.
- Quarter mushroom caps
- Render pan hot with olive oil, add mushrooms
- Season mushrooms with salt
- Prepare shrimp by seasoning with cilantro, honey, minced garlic
- Remove mushrooms from pan, set aside.
- Add shrimp to saucepan and saute
- Prepare presentation: In large bowl, add lettuce heart leaves to center of bowl.
- Slice hearts of palm ¼” thick, and place over lettuce.
- Place shrimp around bowl, with one in center.
- Add mushrooms around shrimp.
- Half grape tomatoes and place around bowl.
- Squeeze fresh lemon juice over shrimp and salad, drizzle olive oil over dish.
- Add fresh slices of avocado, and a dash of black pepper.
