Shrimp Mango Salad

Ingredients

  • 1 bag herb salad mix
  • 1/2 bag arugula
  • 1/2 pound shrimp boiled in herbs and bay leaves
  • 4 small tomatoes
  • 1/3 English cucumber
  • 1 fresh mango
  • 1/2 cup toasted pine nuts
  • 1 fresh avocado
  • 5 leaves of fresh basil

Instructions

  1. Place herb salad mix in large salad bowl.
  2. Add arugula and toss together
  3. Cut tomatoes into wedges
  4. Place cut tomatoes around edges of salad mixture.
  5. Peel cucumber and cut into thin slices
  6. Add sliced cucumber to salad arranged in nice pattern.
  7. Cut mango around seed in middle, and then cut scores in mango pieces to ease removal of fruit. Dice mango into small pieces, making sure skin is removed.
  8. Add diced mango to salad.
  9. Sprinkle pine nuts in salad.
  10. Cut avocado down middle, remove seed, and cut into quarters. Score avocado and peel off skin.
  11. Add sliced avocado to salad.
  12. Add shrimp to salad
  13. Take stem off basil, roll in ball, and chop into small pieces.
  14. Sprinkle basil on top of salad.

Homemade vinaigrette dressing:

  1. 1-cup extra virgin olive oil
  2. 1/4 cup balsamic vinegar
  3. 1 teaspoon Dijon mustard
  4. 4 ozs. Organic raspberry fruit sauce
  5. 1 oz. Sesame oil
  6. Pinch Renee’s rub or similar seasoning
  7. 1 clove garlic
  8. 1/2 cup Sherry wine
  9. 1-tablespoon pomegranate concentrate
  10. Pinch kosher salt
  11. Pinch pepper
  12. 10 fresh raspberries

Homemade vinaigrette dressing:

  1. Combine olive oil and balsamic vinegar to medium mixing bowl.
  2. Add Dijon mustard to other ingredients in bowl.
  3. Add raspberry fruit sauce and sesame oil.
  4. Sprinkle Renee’s rub over other ingredients in bowl.
  5. Whisk all ingredients together thoroughly.
  6. Peel and chop garlic into small pieces.
  7. Mix garlic into bowl with other ingredients.
  8. Add Sherry to thin dressing.
  9. Add pomegranate concentrate to bowl.
  10. Add more Sherry wine if dressing is too thick.
  11. Add salt and pepper to dressing.
  12. Add raspberries to bowl.
  13. Using whisk, mix all ingredients together.
