Spaghetti Carbonara and Frittata

Ingredients

  • 10 raw eggs
  • 1/2 cup heavy whipping cream, and 2 tablespoons
  • 3/4 cup grated parmesan cheese
  • 3 teaspoon salt
  • 1 teaspoon pepper, and one tablespoon
  • 1/4 pound spaghetti pasta
  • 1 tablespoon butter
  • 2 teaspoons olive oil
  • 8 ozs. salt pork
  • 2 cloves garlic
  • 1 cup white wine
  • 1 whole tomato diced

Instructions

  1. Crack 6 eggs in bowl.
  2. Add whipping cream, whip eggs and cream together.
  3. Add 1/4 cup parmesan cheese, and whisk well.
  4. Add 1 teaspoon salt and pepper and whisk together.
  5. Heat fry pan on medium heat for two minutes.
  6. In pot, boil water and 2 teaspoons salt for pasta. Boil for 7 minutes, or until done.
  7. Add butter and 1 teaspoon olive oil to heated pan. Spread butter and olive oil evenly in pan.
  8. Cook on medium high heat, add egg mixture. Cook until outer edges are firm.
  9. Put pan with frittata in oven at 375 degrees.
  10. Cut salt pork into small strips.
  11. Put salt pork in pot, and saute with 1 teaspoon olive oil. Stir. Allow to brown.
  12. Peel garlic, and add whole pieces to pan with pork while pork is browning.
  13. Frittata in oven will be done when it rises, and doesn’t jiggle when moved.
  14. Add white wine to pork mixture. It will begin to smoke, this is desired.
  15. Remove garlic from pan. Lower heat down to low. if other ingredients aren’t ready, turn fire off, and heat up before adding to other ingredients.
  16. Crack 4 eggs in bowl used earlier. Whip eggs together.
  17. Add 2 tablespoons heavy whipping cream, and whip into eggs.
  18. When pasta is done, strain.
  19. Add pasta to pan with salt pork.
  20. Add 1/2 cup parmesan cheese to pasta.
  21. Add 1 tablespoon pepper, more or less to suit individual taste.
  22. Add egg mixture to pasta. Cook on low, stirring frequently, until pasta is covered evenly, and thickens slightly.
  23. Turn pasta into egg mixture.
  24. Add diced tomato to small bowl. Add 1 teaspoon olive oil, stir.
  25. Cut frittata into servings. Put pieces on plates, and add tomato mixture to each one.
  26. Put pasta on another plate, serve.
