Steamed Jade Bamboo and Fish

Ingredients

  • 1 cleaned whole Tilapia
  • 1 box dry jade bamboo
  • 1/2 cup green onion, cut
  • 2 1/2 tablespoons rice wine
  • 1/2 cup fresh ginger
  • 1/4 cup soy sauce
  • 1/4 cup sesame oil
  • pinch sugar
  • 1 whole piece ginger

Instructions

  1. Cook Jade Bamboo for 15 minutes following package directions.Keep stock from bamboo.
  2. Cut cooked Jade bamboo into small pieces.
  3. Cut slices in fish on both sides to allow flavor to enter fish.
  4. Cover fish with Jade bamboo, stuffing inside stomach cavity as well.
  5. Place fish in bowl that is inside large pot with minimal water. This is for steaming.
  6. Add green onion on top of fish in bowl.
  7. Drizzle wine over fish.
  8. Chop ginger and place on fish.
  9. Cover pot with lid and turn on high heat.
  10. Allow water to boil so steam cooks fish.
  11. When water begins to boil, reduce heat to medium. Steam for 10 minutes.
  12. In mixing bowl, add stock from jade bamboo.
  13. Add 1/4 cup soy sauce to bowl.
  14. Add sesame oil to bowl.
  15. Add sugar to bowl.
  16. Grate some fresh ginger into bowl.
  17. When fish is steamed, remove ginger before eating.
  18. Spoon sauce from bowl onto steamed fish.
  19. Serve.
