Ingredients
- 1 Cup Tomatoes – finely chopped
- 1 Cup Cucumbers – finely chopped
- 1 Tsp Salt
- 1 Tsp Black Pepper
- 1 Tsp Chopped Parsley
- 1 Tsp Sugar
- 6oz Extra Virgin Olive Oil
- 2oz Sherry Vinegar
Instructions
Directions:
- Chop tomatoes and cucumbers into uniform size small cubes
- In large mixing bowl, add tomatoes, cucumbers, salt, black pepper, chopped parsley, sugar, olive oil and sherry vinegar
- Stir well, making sure everything is well coated. Set aside
To Serve:
- On large serving plate, spoon summer salad in center of plate.
- Garnish with homemade French bread slices, (bake in oven)
