Summer Salad

Ingredients

  • 1 Cup Tomatoes – finely chopped
  • 1 Cup Cucumbers – finely chopped
  • 1 Tsp Salt
  • 1 Tsp Black Pepper
  • 1 Tsp Chopped Parsley
  • 1 Tsp Sugar
  • 6oz Extra Virgin Olive Oil
  • 2oz Sherry Vinegar

Instructions

Directions:

  1. Chop tomatoes and cucumbers into uniform size small cubes
  2. In large mixing bowl, add tomatoes, cucumbers, salt, black pepper, chopped parsley, sugar, olive oil and sherry vinegar
  3. Stir well, making sure everything is well coated. Set aside

To Serve:

  1. On large serving plate, spoon summer salad in center of plate.
  2. Garnish with homemade French bread slices, (bake in oven)
