Pasta D’Amore

Summary: Delicious and easy to cook, Pasta D’Amore includes angel hair pasta cooked with pancetta sun dried tomatoes, varieties of mushrooms and chicken on the top, garnished with Pecorino Romano cheese. This is an excellent dinner for the whole family.

Prep time and Cooking time (duration): 10 minutes

Number of servings (yield): 3

Ingredients for Pasta D’Amore

  • Pancetta
  • 1 Shallot
  • 7-8 Sun dried tomatoes (already in the olive oil)
  • 1 small bowl of Mushrooms (Black trumpet, shitake, button, blue foot, oyster mushrooms)
  • 2-3 garlic cloves
  • Add 1 bowl of peas
  • Artichoke heart (from the jar)
  • Chicken breast
  • Angel hair pasta
  • Salt
  • Pecorino Romano cheese

Get Ready To Work in “Real Time” to Make Pasta D’Amore

Get out these items and utensils: Knife for chopping, 1 skillet, and 1 sauce pan

Get from your pantry: olive oil, salt, shallot, garlic, Angel hair pasta, Sun dried tomato

Get from your refrigerator: Panchetta, Mushrooms, Artichoke heart, Chicken breast,peas,

Pre-prepare the following:

  • Peel and mince garlic
  • Boil water in the sauce pan and add salt in it.
  • Mince pancetta
  • Finely chop sun dried tomatoes.
  • Finely mince mushrooms
  • Grill chicken for about 4 minutes on each side and slice it

Begin to cook with Chef Tedesco:

  1. Take a skillet and add pancetta.
  2. Sear it for a while.
  3. Add olive oil in the skillet.
  4. Add finely chopped shallot.
  5. Cook it for about 2 minutes.
  6. Add finely chopped sun dried tomatoes.
  7. Add finely minced mushrooms.
  8. Add minced garlic in it.
  9. Add salt in it.
  10. Add peas in it.
  11. Cook the Ingredients in the pan for 5-6 minutes
  12. Add pasta in the boiling water and cook it.
  13. When pasta is done add it to the skillet with pancetta.
  14. Cook pasta and pancetta for about 45 seconds or so.

To serve

  1. Lay the pasta and pancetta on the serving dish.
  2. Put grilled chicken on top of pasta.
  3. Sprinkle Pecorino Romano cheese on it


Seared Grouper with Guacamole

Summary:Easy to cook Seared grouper with guacamole dip having crab meat in it as topping is an excellent one pan dish.

Prep time and Cooking time (duration): 10 minutes

Number of servings (yield): 2-3

Ingredients for Seared grouper with guacamole

  • 3 Fresh grouper fillets.
  • 4-5 avocados
  • 1/4 teaspoon cayenne pepper
  • 1 lime
  • 1 lemon
  • Tabasco sauce
  • 1 table spoon tequila
  • Cilantro
  • Salt
  • Pepper
  • Olive oil
  • Precooked crab meat

Get Ready To Work in “Real Time” to Make Seared grouper with guacamole.

Get out these items and utensils: Knife for chopping, 1 skillet, 1 bowl

Get from your pantry: olive oil, salt, pepper, tequila, cayenne pepper

Get from your refrigerator: grouper fillets, avocado, lime, lemon, Tabasco sauce,

Pre-prepare the following:

  • Peel avocado and deseed them.
  • Preheat the oven at 350 degrees.

Begin to cook with Chef Dominic Tedesco

  1. Take a skillet and pour olive oil in it.
  2. Lay grouper fillets the skillet. Season the fillet with salt and pepper on both the sides.
  3. Seared the grouper for 1 minute on each
  4. Put the skillet in the preheated oven for about 8 minutes.

Prepare avocado dip

  1. Put the avocado in the bowl and mash them.
  2. Add cayenne pepper in the bowl.
  3. Sprinkle salt and pepper.
  4. Squeeze lime and lemon
  5. Add crab meat in it.
  6. Pour little Tabasco sauce in the dip.
  7. Add tequila.
  8. Gently stir it so that the crab meat should not mash up.

To serve:

  1. Lay the fillets on the serving dish.
  2. Put dipping on the top of fillets.
  3. Splash some Tabasco sauce on it.
  4. Garnish it with cilantro leaves.
