Tropical Fruit Compote

A light desert Fruit Compote made with tropical fruit and berries poached in simple syrup and having a distinct flavor of cinnamon and star anise. A simple “make-ahead” dessert that will wow your friends and family. Top this delicious fresh fruit compote with coconut sorbet.

Ingredients for Fruit Compote:

  • 2 Kiwis
  • 1 Papaya
  • 1 Mango
  • 1 Dragon fruit
  • 1 Passion fruit
  • 1/2 cup mango puree
  • 2 gelatins
  • Coconut sorbet
  • 1/4 cup raspberries
  • 1/4 cup blue berries
  • 1/4 cup black berries
  • 2 vanilla bean
  • ½ Cup sugar
  • 1 Cinnamon stick
  • 1Star anise

Get Ready To Work in “Real Time” to make Fruit Compote

Get out these items and utensils: Knife, Cutting board, 2 pans, 3 small martini glass

Get from your pantry: vanilla bean, sugar, cinnamon stick, star anise

Get from your refrigerator:  Kiwis, papaya, mango, dragon fruit, passion fruit, mango puree, coconut sorbet, raspberries, blue berries, black berries gelatin

Pre-prepare the following:

  • Make small dice of mango, papaya, kiwi
  • Scrap the inner portion of passion fruit use it as syrup
  • Scrap the inner portion of dragon fruit along with the seeds and add it into the passion fruit syrup
  • Soak gelatin in water

Begin to cook with Chef Trevethan:

Prepare simple syrup:

  1. Pour 1 cup water in the pan and add vanilla bean in it
  2. Add star anise
  3. Pour sugar in it
  4. Add cinnamon stick and let this syrup boil for while

Poach the fruits:
Add all the diced fruit (mango, papaya, and kiwi) into the simple syrup and poach for 3 minutes

Prepare the sauce:

  1. Add mango puree in the pan over the medium heat
  2. Pour 1 table spoon of sugar
  3. Add gelatin in it and stir and cook for 5 minutes
  4. Add 1 teaspoon passion fruit puree and ½ teaspoon dragon fruit seed in it and stir

Prepare exotic fruit compote:

  1. Place all the poached fruit in the bowl and keep it in freezer for 2 minutes
  2. Pour sauce in the bowl and add raspberries, blue berries, blackberries and stir everything thoroughly

To serve:

  1. Place the exotic compote with sauce in the martini glass
  2. lay one scoop of coconut sorbet in it
