Whole Chicken

Summary: Become the neighborhood Grilling Guru as you learn to barbeque whole chicken having orange glaze topping to perfection with this mouth-watering grilling feast!  With marinated vegetable complemented by a grilled tomato, sweet potato, and asparagus on the side of the dish.

Prep time and Cooking time (duration): 35 minutes

Number of servings (yield): 6

Ingredients for Whole Chicken

  • Whole chicken
  • Salt and pepper
  • Olive oil
  • 2 cloves garlic
  • Fresh Sage
  • Fresh Thyme
  • Fresh rosemary
  • Fresh oregano
  • Fresh parsley
  • 3-4 Tomato
  • 2 Sweet potato
  • Asparagus
  • 1 liter bottle of Organic white vinegar
  • 1 orange
  • chunky salt

Get Ready To Work in “Real Time” to Make Grilled Pizza and Buffalo Steaks:

Get out these items and utensils: Knife for chopping, 2 spatulas for grilling, large tong, 1 sauce pan

Get from your pantry: garlic, olive oil, Organic white vinegar, Sweet potato, salt, pepper, chunky salt

Get from your refrigerator: Chicken, fresh sage, thyme, rosemary, oregano, parsley, tomato, asparagus

Pre-prepare the following:

  • Peel and chop  garlic
  • Chop fresh sage, rosemary, thyme & oregano.
  • Clean the chicken and take the back bone off and remove extra fat.
  • Preheat grill.
  • Cut the vegetables, i.e. tomato, asparagus and sweet potato.
  • Clean the orange.

Begin to cook with Chef Pelligrini:

  1. Marinade chicken and Vegetables
  2. Smash the chicken with your hands and make deep incisions around breast and thighs.
  3. Salt and pepper on chicken.
  4. Sprinkle  chopped garlic and chopped sage,oregano,rosemary,thyme over the chicken
  5. Drip olive oil over the tops of the chicken
  6. Drip approx. 1/2 cup of organic white vinegar over chicken.
  7. Massage the chicken gently so that herb, salt and pepper can get deep inside the incisions
  8. Place vegetables on the baking dish and Sprinkle them  with salt and pepper.
  9. Drip olive oil over the top.  Marinade for 10 minutes.

Cooking Chicken and Vegetables:

  1. Put chicken on the of the grill with breast side down. Cover the chicken while grilling.
  2. Put marinade vegetables on the other side of the grill.
  3. Flip the vegetables when they are getting brown in color. Do not flip tomatoes just Cook only one side of it.
  4. Turn chicken as it is turning brown and cover it again do it 4-5 times.

Prepare orange glaze:

  1. Put Organic white vinegar in pan approx 800ml.
  2. Reduce it down to 1/4.
  3. Squeeze fresh orange and add that orange in the pan.
  4. Add 3-4 table spoon of olive oil in it.

To serve:

  1. Place grilled Chicken on plate.
  2. Place grilled vegetables on the side of the plate.
  3. Drip orange glaze over chicken.
  4. Garnish it with few leaves of fresh parsley.
  5. Add chunky salt on it.

Chicken Piccata

Summary: Chicken Piccata is easy and fast to make, but is elegant enough for a fancy dinner. This Chicken Piccata recipe can be made in just a few minutes seasoned chicken breast covered with a smooth buttery lemon topped with a few sassy capers.

Prep time and Cooking time (duration): 35 minutes

Number of servings (yield): 6

Ingredients for Chicken Piccata

  • Chicken breast approx 1 lb.
  • Salt and pepper
  • 2 tablespoon Capers
  • Olive oil
  • 2 cloves garlic
  • Fresh parsley
  • 3-4 Tomato
  • 2 Sweet potato
  • Asparagus
  • Lemon
  • 1 Shallot

  • Cut the chicken breast into wedges 1/4 inches thick.
  • Preheat grill.
  • Cut the vegetables, i.e. tomato, asparagus and sweet potato.
  • Chop shallot.

Begin to cook with Chef Pelligrini:

Marinade chicken breast and Vegetables

  1. Put the chicken breast in the dish and add chopped garlic and capers in it.
  2. Sprinkle salt and pepper on chicken breast.
  3. Add chopped shallot.
  4. Add chopped parsley in it.
  5. Squeeze fresh lemon on it.
  6. Drip olive oil over the tops of the chicken
  7. Place vegetables on the baking dish and sprinkle them with salt and pepper.
  8. Drip olive oil over the top of chicken breast.

Cooking Chicken and Vegetables

  1. Put chicken on the grill.
  2. Put marinade vegetables on the other side of the grill.
  3. Flip the vegetables and chicken breast when they are getting brown in color. Do not flip tomatoes; cook only one side of it.

To serve:

  1. Place grilled Chicken breast on plate.
  2. Place grilled vegetables on the side of the plate.
  3. Drip olive oil over chicken.
  4. Garnish it with few leaves of freshly parsley and capers.
