Vegan Pesto

Summary:Vegan pesto sauce, a traditional Italian sauce made from fresh basil, pine nuts, olive oil, garlic and cilantro to be served with fresh pasta, pita bread or over the spinach salad is healthy, delicious and easy to make.

Prep time and Cooking time (duration): 210 minutes

Number of servings (yield): 6

Ingredients for Vegan Pesto:

  • Fresh cilantro
  • 1/2 cup fresh basil
  • 1 lemon
  • 1 table spoon nutritional yeast
  • 1 lime
  • 2 table spoon pine nuts
  • 1/4 teaspoon of cayenne pepper
  • 7 garlic cloves
  • 1/2 cup olive oil
  • 1/2 cup spinach
  • 1 tomato
  • 1 table spoon yaca cheese
  • 1 drop of essential oil( fennel flavor)

Get Ready To Work in “Real Time” to make Vegan Pesto:

Get out these items and utensils: Food processor, knife, cutting board

Get from your pantry: nutritional yeast, cayenne pepper, pine nuts, garlic, and essential oil

Get from your refrigerator: Fresh cilantro, fresh basil, yaca cheese tomato, baby spinach, lemon, lime

Pre-prepare the following:

  • Roughly cut the cilantro
  • Make 1 teaspoon lemon zest with fresh lemon
  • Peel garlic
Begin to cook with Chef Myra:

  1. Put the cilantro and basil in the food processor
  2. Sprinkle nutritional yeast, salt, pine nut, lemon zest, cayenne pepper, garlic and turn on the food processor
  3. Pour oil in it and squeeze lime on it and add essential oil and mix it thoroughly with the help of food processor.
  4. Keep it in the bowl in refrigerator.

To serve:

  1. Lay the spinach on the plate and cut tomato
  2. Pour 2 table spoons of pesto sauce on it
  3. Sprinkle yaca cheese on it
